Not necessarily looking for Arabic middle names (although we do like Amani). We have a Scottish last name - is it odd to have a distinctly Arabic first name with a Scottish last name?? And can we pair Khalil with a very different/non-Arabic middle name?

I like the spelling Khalil the most. I heard it on a young boy on TV once and really liked it. For middles, maybe:

Khalil Anwar, Khalil Preston, or Khalil Grant would all be nice, I think. And I think it’s completely fine to have an Arabic first name and Scottish last name, and his middle doesn’t need to be Arabic. Just whatever you like.
