I love Ernest as is. Ernie is so cute as a nickname. But if you’re not into it, try this link: http://www.behindthename.com/name/ernest . My favorite variant is Ernst ("airnst") but it isn’t the easiest to pronounce outside of German speaking countries.
Also, Che Guevara’s real first name was Ernesto. So how about Che "chay?" Just spit ballin’.
Oh, and for what it’s worth, Ernestine / Ernestina for a girl is darling. It’s retro heaven. Good luck! :0)
