I believe the traditional spelling is Esme or Esme with the accented last E. I like Esme best because it looks cleaner. But from your list my favorite is Esmae.

Esme is the masculine form - I’m so glad you’ve decided not to use it. Esmee is the feminine form. They are pronounced the same. It like the name Rene/Renee.

I know the traditional spelling is Esme but I like these because it’s clear that it has the May ending and would be less likely to get mispronounced as Ez-mee instead of Ez-may other than that I do also really like the spelling Esme.

Esmee. With an accent on the first e.
If you’re going to spell it differently, Esmay makes the most sense. Esmai looks like ez-MY and Esmae just looks awkward.
